- 1 cup (250 ml) raspberry puree
- 3 tablespoons sugar, adjusted to taste
- 2 teaspoons gelatin
- 1/4 cup (60 ml) water
- 1 cup (250 ml) heavy whipping cream
- A few fresh raspberries for garnish (optional)
Instructions
- Prepare the Raspberry Puree by blending fresh raspberries and sugar until smooth. Strain if desired.
- Bloom the gelatin by sprinkling it over water and letting it sit for 5 minutes.
- Heat the raspberry puree gently over low heat, then stir in the bloomed gelatin until dissolved.
- Whip the heavy cream in a mixing bowl until soft peaks form.
- Combine the raspberry mixture into the whipped cream gently to maintain fluffiness.
- Chill in serving cups or a large mold for at least 4 hours until fully set.
- Serve by unmolding or leaving in cups, garnished with fresh raspberries.
Notes
You can substitute other fruits for raspberries, such as strawberries or mangoes. Use store-bought raspberry puree for convenience.
