Description

A rich and creamy French dessert featuring a luscious raspberry puree, perfect for any occasion.


Ingredients

  • 1 cup (250 ml) raspberry puree
  • 3 tablespoons sugar, adjusted to taste
  • 2 teaspoons gelatin
  • 1/4 cup (60 ml) water
  • 1 cup (250 ml) heavy whipping cream
  • A few fresh raspberries for garnish (optional)

Instructions

  1. Prepare the Raspberry Puree by blending fresh raspberries and sugar until smooth. Strain if desired.
  2. Bloom the gelatin by sprinkling it over water and letting it sit for 5 minutes.
  3. Heat the raspberry puree gently over low heat, then stir in the bloomed gelatin until dissolved.
  4. Whip the heavy cream in a mixing bowl until soft peaks form.
  5. Combine the raspberry mixture into the whipped cream gently to maintain fluffiness.
  6. Chill in serving cups or a large mold for at least 4 hours until fully set.
  7. Serve by unmolding or leaving in cups, garnished with fresh raspberries.

Notes

You can substitute other fruits for raspberries, such as strawberries or mangoes. Use store-bought raspberry puree for convenience.
