Description
Foie Gras Maison is the perfect recipe for an elegant meal. Quick, simple, and delicious, it will impress at every occasion.
Ingredients
Scale
- 500 g of duck foie gras
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 tablespoon of cognac
- 1 teaspoon of sugar
- 1 pinch of four spices
- 1 bay leaf (for cooking)
Instructions
- Prepare the foie gras: Start by removing visible membranes from the foie gras. It’s a bit delicate, but with love and patience, it will be fine! Then cut it into equal-sized pieces.
- Season: In a large bowl, mix salt, pepper, sugar, and four spices. Then add the pieces of foie gras and the cognac. Let marinate for at least one hour. If you have time, overnight in the fridge would be ideal for the flavors to meld.
- Shape: In a terrine mold, arrange the pieces of foie gras tightly (a bit like Tetris, but more delicious!). Add the bay leaf on top.
- Bake: Preheat your oven to 90°C. Place the mold in a baking dish filled with hot water (bain-marie). Cook for about 60 minutes. Also, check that the internal temperature does not exceed 55°C for a perfect texture.
- Cool: Once cooking is complete, let it cool to room temperature before transferring it to the refrigerator for at least 24 hours. This helps the foie to firm up and develop its flavors.
Notes
Don’t hesitate to play with the spices! Sometimes, a touch of paprika or pepper can be a real plus. Remember, it’s the taste that counts, and a few cracks in the terrine give it character.
