- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- Salt and pepper to taste
- Fresh herbs (like rosemary or thyme), optional
- 4 large russet potatoes
- 3 tablespoons olive oil
- Salt to taste
- 4 cups mixed greens (spinach, arugula, romaine)
- 1 cup cherry tomatoes, halved
- ½ cucumber, sliced
- ¼ red onion, thinly sliced
- Your favorite dressing (balsamic vinaigrette is a great choice!)
Instructions
- Preheat your oven to 425°F (220°C).
- Mix your olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Rub this mixture all over your whole chicken.
- Place the seasoned chicken in a roasting pan and roast in the oven for about 1 hour to 1 hour and 15 minutes.
- Cut your potatoes into wedges or strips and toss them in a bowl with olive oil and salt.
- Spread them out on a baking sheet and bake for about 30-35 minutes until golden and crispy.
- Mix your garden salad with greens, cherry tomatoes, cucumber, and red onion.
- Serve the carved chicken alongside the fries and garden salad.
Notes
If you’re short on time, use pre-cut or frozen fries. For a twist, add smoked paprika or lemon zest to the chicken rub.
