Description

Mini cheesecakes are the perfect solution for those who love indulgent desserts but are short on time or space.


Ingredients

  • 200g of graham crackers
  • 100g of melted butter
  • 400g of cream cheese
  • 200g of sugar
  • 1 teaspoon of vanilla extract
  • 3 eggs
  • Whipped cream or fruit for topping (optional)

Instructions

  1. Preheat your oven to 160°C (320°F). Crumble the graham crackers in a bowl, then mix with the melted butter until a dough forms. Press this mixture into the bottom of your muffin tins.
  2. In a large bowl, beat the cream cheese with the sugar and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.
  3. Pour the cheesecake filling over the crust in the muffin tins, leaving a little room at the top.
  4. Bake the mini cheesecakes for about 20 to 25 minutes or until the center is slightly firm. Once baked, let them cool at room temperature before refrigerating for at least two hours.
  5. Gently remove your mini cheesecakes from the molds and feel free to top them with whipped cream or fresh fruit for an extra touch of indulgence.

Notes

Do not overbake your mini cheesecakes to keep them creamy and soft. A slight jiggle in the center is a good sign! Feel free to customize by adding citrus zest, melted chocolate, or spices like cinnamon to your filling for even richer flavors.
