- 150 g of flour
- 75 g of butter
- 3 eggs
- 1 pinch of salt
- 125 ml of water
- 250 ml of thick fresh cream
- 100 g of praline
- 50 g of powdered sugar
- Almond flakes for decoration
Instructions
- Prepare the choux pastry: In a saucepan, melt the butter with the water and salt. When boiling, add the flour all at once, stirring vigorously until the dough pulls away from the sides. Remove from heat and let cool.
- Add the eggs: Incorporate the eggs one by one, mixing well after each addition until the mixture is smooth and shiny.
- Form the circles: On a parchment-lined baking sheet, pipe two circles of choux pastry using a pastry bag to form the base and top of the Paris-Brest. Sprinkle with almond flakes for extra flavor.
- Bake: Preheat your oven to 200°C (390°F). Bake for about 25-30 minutes, until the circles are golden and puffed. Let cool on a rack.
- Prepare the praline cream: In a bowl, whip the cream until it reaches a firm consistency. Gently fold in the praline and powdered sugar.
- Assemble: Once the circles are cool, cut them in half horizontally. Generously fill the bottom with praline cream, then place the top back on. Dust with powdered sugar for a finishing touch.
Notes
Don’t worry if your choux pastry doesn’t look perfect; it’s the flavor that counts! Consider adding dark chocolate or orange zest to the cream for extra flavors.
