Description
Delicious and versatile mini quiches perfect for brunch, picnics, or appetizers.
Ingredients
Scale
- 6 eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar, mozzarella, or your preference)
- 1 cup chopped vegetables (spinach, peppers, onions)
- Salt and pepper to taste
- Pâte brisée or puff pastry
Instructions
- Preheat the oven and the pastry. Preheat your oven to 180°C (350°F). Meanwhile, roll out the pastry into greased mini muffin molds. Ensure there’s some overhang for a crispy edge!
- Whisk the eggs. In a bowl, crack the eggs and mix in the milk. Add a pinch of salt and pepper to enhance the flavor. You can also include herbs if you have them on hand.
- Incorporate the cheese and vegetables. Mix the shredded cheese and chopped vegetables into your egg mixture. Stir well to combine all ingredients. Don’t hesitate to taste for seasoning!
- Fill the molds. Pour the mixture into the pastry-lined muffin molds, ensuring not to fill them to the brim as the quiches will rise while baking!
- Bake and let cook. Place the mini quiches in the oven and bake for about 20-25 minutes, or until they are golden and puffed up.
Notes
Use any leftover vegetables you have on hand. If the pastry starts to brown too quickly, cover it with aluminum foil to prevent burning.
