  • 1 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Prep the orange: Wash thoroughly and chop into quarters, removing any seeds. Blend it in a food processor until smooth.
  2. Mix the wet ingredients: In a large mixing bowl, beat the eggs and sugar until pale and fluffy.
  3. Combine: Gently fold in the blended orange, baking powder, and salt.
  4. Bake: Pour the mixture into a greased cake pan and bake in a preheated oven at 350°F (175°C) for about 35-40 minutes.
  5. Cool & serve: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack. Dust with powdered sugar if desired.
