Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk or your favorite non-dairy alternative
  • 1 large egg
  • 2 tablespoons melted butter for a rich flavor

Sausages

  • 12 mini sausages bite-sized

Preparation

  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the milk, egg, and melted butter.
  • Gradually add the wet ingredients to the dry ingredients, stirring until everything is just combined. A few lumps are okay.

Cooking

  • Preheat your griddle or a non-stick skillet over medium heat.
  • Place the mini sausages on the hot surface and let them brown for about 2-3 minutes.
  • Pour a tablespoon of pancake batter over each sausage, then flip them when the edges look dry and bubbles form on top.
  • Continue cooking until all your batter and sausages are used.

Notes

For golden-brown pancakes, use a light cooking spray. Customize with chocolate chips, blueberries, or a dash of cinnamon as desired. These bite-sized pancakes can also be stored in an airtight container in the fridge or frozen for later.
