Ingredients
  

For the Cake

  • 1.75 cups 1 3/4 cups all-purpose flour
  • 1.5 cups 1 1/2 cups granulated sugar
  • 0.75 cups 3/4 cup unsweetened cocoa powder
  • 1.5 teaspoons 1 1/2 teaspoons baking powder
  • 1.5 teaspoons 1 1/2 teaspoons baking soda
  • 1 teaspoon 1 teaspoon salt
  • 2 large 2 large eggs
  • 1 cup 1 cup whole milk
  • 0.5 cups 1/2 cup vegetable oil
  • 2 teaspoons 2 teaspoons vanilla extract
  • 1 cup 1 cup boiling water

For the Frosting

  • 0.5 cups 1/2 cup unsalted butter, softened
  • 0.67 cups 2/3 cup unsweetened cocoa powder
  • 3 cups 3 cups powdered sugar
  • 0.33 cups 1/3 cup whole milk
  • 1 teaspoon 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Using parchment paper on the bottom of the pans makes it easier to lift the cakes out later.
  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, milk, oil, and vanilla extract. Mix on medium speed until well combined.
  • Carefully stir in the boiling water. The batter will be runny; this is what we want for that moist goodness. Pour it evenly into the prepared pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • While the cakes cool, whip up your fudge frosting. In another bowl, beat the softened butter until creamy, then mix in the cocoa powder, powdered sugar, milk, and vanilla until your frosting is smooth and spreadable.

Assembling

  • Once the cakes are cool, place one layer on a serving plate and spread a generous amount of frosting on top.
  • Place the second layer on top and frost the top and sides fully.

Notes

For a pop of color, sprinkle some chocolate shavings or fresh raspberries on top of your frosted cake. You can also make this cake a day ahead and wrap layers tightly before frosting. It tastes even better the next day!
