  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 teaspoon peppermint extract For minty freshness

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, melt the unsalted butter over low heat and let it cool slightly.
  • In a large bowl, whisk together the melted butter and granulated sugar until creamy. Add in the eggs, one at a time, and then add the vanilla extract.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, being careful not to overmix.
  • Fold in the chocolate chips and peppermint extract.

Baking

  • Pour the batter into a greased 9x13 inch baking dish, spreading it evenly.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Cooling

  • Allow brownies to cool in the pan for about 10 minutes before cutting into squares.

Notes

You can double the recipe for more brownies. For a minty fresh upgrade, top with crushed peppermint candies or chocolate sauce. Store in an airtight container for up to a week.
