Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter, sugar, and brown sugar until fluffy and light.
  • Beat in the eggs, one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt, then gradually mix this into the wet ingredients until just combined.
  • Fold in the chocolate chips and chopped maraschino cherries.
  • Using a rounded tablespoon, scoop out dough onto the prepared baking sheets, leaving space between each dough ball.

Baking

  • Bake for about 10-12 minutes, or until the edges are golden, then let them cool on the baking sheet before transferring to a wire rack.

Notes

Chill the dough for about 30 minutes before baking to avoid spreading. You can replace maraschino cherries with dried cranberries for a variation. Store leftover cookies in an airtight container.
