  • 1 cup fresh berries (strawberries, blueberries, or raspberries)
  • 1 cup berry jelly (your favorite flavor)
  • 8 oz semi-sweet chocolate
  • 1 tablespoon coconut oil optional, but it makes the chocolate extra smooth
  • sprinkles or chopped nuts for a fun topping

Preparation

  • Rinse your fresh berries gently under cool water. Pat them dry with a paper towel.
  • In a small mold or a mini muffin tin, add a layer of berry jelly at the bottom (about 1 tablespoon). Place a berry on top and then cover with more jelly. Repeat until you fill the molds, then pop these beauties into the fridge for about 1-2 hours or until they’re set.

Chocolate Coating

  • While you wait for your jelly to set, melt the semi-sweet chocolate. You can do this in a microwave (at 30-second intervals) or on the stove using a double boiler. If you’re using coconut oil, add it in now.
  • Once the jelly is ready, carefully remove each jelly-filled berry from the mold. Dip each piece into the melted chocolate, letting the excess drip off.
  • Place the chocolate-coated jelly berry on a parchment paper-lined baking sheet. Before the chocolate sets, sprinkle with colorful toppings or chopped nuts.
  • Pop the baking sheet into the fridge for about 30 minutes to allow the chocolate to harden.

Notes

Don’t worry if your chocolate doesn’t look absolutely perfect. If you end up with a few messy chocolate blobs, just call it 'rustic!' It’ll taste the same.
