Preparation

  • Peel and dice the potatoes into bite-sized chunks.
  • Chop the onion and slice the smoked sausage.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the onion and sauté for 2-3 minutes until translucent.
  • Add the potatoes, drizzle in the remaining olive oil, and season with salt and pepper.
  • Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden brown and crispy.
  • Add the sliced smoked sausage and mix well.
  • Cook for another 5-7 minutes, seasoning with paprika or garlic powder if desired.
  • Taste and adjust the seasoning before serving.

Notes

For extra crispy potatoes, soak them in cold water for 30 minutes before cooking. You can substitute smoked sausage with hot dogs or leftover grilled chicken. Don’t worry if your potatoes look a bit brown; it means they are caramelizing and developing flavor.
