Ingredients
  

For the Gelée

  • 2 cups fresh strawberries, hulled and halved
  • 1 cup water
  • 3 tablespoons sugar (adjust to your sweetness preference) Feel free to adjust based on berry sweetness.
  • 1 tablespoon lemon juice
  • 1 packet (about 2 teaspoons) gelatin powder Can substitute with agar-agar for a vegan option.

Preparation

  • Start by rinsing and hulling your strawberries.
  • In a medium saucepan, add the strawberries, sugar, and water. Stir them together and bring to a gentle boil over medium heat.
  • Once boiling, reduce the heat and let it simmer for about 5-10 minutes until the strawberries soften and release their juices.
  • After simmering, remove the saucepan from heat and puree the mixture using an immersion blender or a regular blender.
  • In a small bowl, sprinkle your gelatin powder over 3 tablespoons of cold water and let it bloom for about 5 minutes.
  • Add the bloomed gelatin to the strawberry puree while stirring to combine.

Setting

  • Pour the mixture into pretty serving glasses or molds and let it cool at room temperature for about 30 minutes.
  • Refrigerate for at least 2-3 hours to set.

Serving

  • Once set, garnish with fresh mint leaves or a dollop of whipped cream and serve.

Notes

Adjust sugar based on berry sweetness. This recipe works with other berries like raspberries or blueberries.
