Ingredients
  

For the filling

  • 1/2 cup ricotta cheese
  • 1/4 cup sun-dried tomatoes, chopped oil-packed brings extra flavor
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup shredded mozzarella cheese for added cheese goodness

For the sandwich

  • 2 slices your favorite bread (sourdough or whole grain)
  • 2 tablespoons butter for the golden crust
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a mixing bowl, combine the ricotta cheese, sun-dried tomatoes, and spinach. Season with salt and pepper to taste. Mix until well combined.

Assembly

  • Lightly butter one side of each slice of bread.
  • Place one slice of bread butter-side down in a skillet over medium heat. Spread half of the cheesy spinach mixture on top. Sprinkle with mozzarella cheese and cap it off with the second slice of bread, butter-side up.

Grilling

  • Cook for about 3-4 minutes, or until the bottom slice is golden brown. Flip carefully and cook the other side until golden and the cheese has melted.

Serving

  • Remove the sandwich from the pan and let it rest for a minute before slicing in half. Serve warm with a side salad or a bowl of tomato soup.

Notes

Use sturdy bread to hold the fillings. Feel free to add other ingredients like avocado or pesto for extra flavor. Keep sandwiches warm in a low oven if making multiple.
