Ingredients
  

For the Grilled Cheese

  • 4 slices slices of your favorite bread (sourdough works wonders!)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup sun-dried tomatoes, chopped Look for pre-chopped for convenience.
  • 1 cup fresh spinach Baby spinach can be used for ease.
  • 2 tablespoons olive oil Divided for toasting and grilling.
  • to taste Salt and pepper

Instructions
 

Prep the Fillings

  • In a medium bowl, combine the ricotta cheese, mozzarella, sun-dried tomatoes, and spinach. Mix until well incorporated.

Toast the Bread

  • Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Once hot, add the slices of bread, toasting lightly on one side until golden.

Assemble the Sandwiches

  • Flip the bread slices, spreading a generous portion of your cheese mixture on each slice, then top with another slice of bread (toasted side in).

Cook the Sandwiches

  • Carefully place the sandwiches back into the skillet. Drizzle the remaining olive oil on the outside of the bread. Press down gently and cook for about 3-4 minutes before flipping.
  • Continue to cook until both sides are golden and the cheese is gooey.

Cut and Serve

  • Once cooked, remove from the skillet, slice in half, and serve immediately.

Notes

For a crispy outer layer, sprinkle some Parmesan cheese on the outside of the bread before grilling. Customize with different cheeses or vegetables like bell peppers or onions.
