Batter Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cup unsalted butter, softened Feel free to sneak a nibble!
  • 1 cup buttermilk Homemade works too; just add a splash of vinegar to the milk.
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Fruits

  • 3-4 ripe peaches, sliced The stars of the show! Reserve a few for topping.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes.
  • Add the eggs, one at a time, beating well after each addition, then mix in the vanilla extract.
  • In another bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually blend the dry mixture into the wet ingredients, alternating it with the buttermilk.
  • Fold in the peach slices, reserving a few for topping.

Baking

  • Pour the batter into the prepared baking dish and spread it out evenly.
  • Place the remaining peach slices on top.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool the cake in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe peaches for the best flavor. A sprinkle of cinnamon can be added for extra flavor. Serve warm with vanilla ice cream.
