Ingredients
  

For the Lobster Medallions

  • 2 tails lobster tails (fresh or frozen) Fresh is best!
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Citrus Foam

  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1/2 cup heavy cream
  • 1 zest orange for that extra zing!

Preparation

  • Start by cooking the lobster tails in boiling salted water for about 5-7 minutes until bright red and cooked through.
  • Let the lobster cool slightly, then remove the meat from the shell and slice it into medallions.

Cooking the Medallions

  • In a skillet, heat olive oil over medium heat.
  • Season the lobster medallions with salt and pepper.
  • Sauté them in the skillet for about 2-3 minutes on each side until heated through and just beginning to brown.

Making the Citrus Foam

  • In a saucepan, combine the orange juice, lemon juice, and honey.
  • Bring it to a gentle simmer and let it reduce for about five minutes.
  • Remove from heat and let it cool slightly before transferring to a blender.
  • Add the heavy cream and orange zest to the blender and blend until frothy, about 30 seconds.

Final Assembly

  • To plate, arrange the lobster medallions neatly on a plate and drizzle the citrus foam generously over each medallion.
  • Feel free to get artsy with it!

Notes

If your citrus foam isn’t as frothy as desired, simply re-blend it for a few seconds. For a more approachable option, consider using shrimp instead of lobster.
