Ingredients

For the Crust

  • 1.5 cups crushed graham crackers
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar

For the Cheesecake Filling

  • 2 packages cream cheese, softened (8-ounce each)
  • 0.5 cups sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup heavy cream

For the Baklava Swirl

  • 1 cup pistachios, finely chopped
  • 0.5 cups honey
  • 0.25 cups sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together the crushed graham crackers, melted butter, and sugar until well combined. Press this mixture into the bottom of a greased 9x9-inch baking pan.
  • In a large mixing bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy.
  • Add the eggs one at a time, blending well after each addition. Finally, fold in the heavy cream.
  • In another bowl, combine the finely chopped pistachios, honey, sugar, cinnamon, and lemon juice.
  • Pour the cheesecake filling over the crust, smoothing it out. Then, drop spoonfuls of the baklava mixture over the cheesecake filling and swirl it gently with a knife.

Baking

  • Pop your baking pan in the preheated oven and let it bake for about 40-45 minutes.

Cooling and Serving

  • Once baked, let the bars cool to room temperature, then chill in the refrigerator for at least 2 hours.
  • Slice into squares or rectangles and enjoy!

Notes

Don’t panic if it cracks: Cheesecakes sometimes do that, and it doesn’t affect the flavor. Use fresh ingredients for better results. Experiment with nuts, such as walnuts or almonds, as alternatives!
