  • 2 ripe tomatoes, diced
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • Fresh parsley or cilantro, for garnish

Preparation

  • Start by gathering all your ingredients.

Cooking the Eggs

  • Place the eggs in a saucepan, cover them with water, and let them boil for about 8-10 minutes.
  • Once they're done, transfer them to an ice bath to prevent overcooking.

Sautéing Onions and Tomatoes

  • In a large skillet, heat the olive oil over medium heat.
  • Toss in the chopped onions and sauté until they’re golden and fragrant, about 5-6 minutes.
  • Stir in the diced tomatoes, paprika, cumin, salt, and pepper.
  • Let this simmer for about 10 minutes.

Finishing the Dish

  • Carefully peel the eggs and make small slits on the top.
  • Gently place them in the tomato mixture to soak in all the deliciousness for about 5 more minutes.
  • Garnish with fresh parsley or cilantro and serve it with crusty bread.

Notes

For a spicy kick, sprinkle chili powder or red pepper flakes into the tomato mixture. You can add spinach or bell peppers for extra nutrition and color. Don't worry if the sauce looks lumpy; it will taste heavenly!
