  • 4 large large eggs
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 14 ounces can diced tomatoes Including juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Preparation

  • Heat the olive oil in a large skillet over medium heat. Toss in the chopped onion and sauté until it’s translucent, about 5 minutes.
  • Stir in the minced garlic and sauté for another minute. Add the cumin and paprika. Cook for an additional 30 seconds.
  • Pour in the diced tomatoes (juice included!), salt, and pepper. Let this simmer for about 10 minutes, stirring occasionally.
  • Create little indentations in the sauce and crack an egg into each. Cover the skillet and cook for about 5-7 minutes or until the whites are set.
  • Once the eggs are cooked to perfection, sprinkle with fresh parsley or cilantro.

Notes

If the sauce looks too chunky, add a splash of water or broth. For a Mediterranean twist, consider adding feta cheese or olives before serving.
