Ingredients
  

For the Marinade

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice (about one lemon)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika or regular paprika if you’re not feeling smoky
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • Fresh herbs for garnish (like parsley or cilantro) optional

Preparation

  • In a bowl, combine the olive oil, lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk it all together until it’s nicely blended.
  • Place your chicken breasts in a zip-top bag or a dish, and pour your glorious marinade over them. Seal the bag or cover the dish and let it marinate in the fridge for at least 30 minutes (1-2 hours is ideal if you have the time).

Cooking

  • Fire up your grill to medium-high heat. If using a charcoal grill, make sure the coals are glowing hot.
  • Remove the chicken from the marinade and let the excess drip off. Place them on the grill and grill for about 6-8 minutes per side, depending on thickness.
  • Check for doneness when the chicken reaches an internal temperature of 165°F. You can use a meat thermometer for this.
  • Once done, remove the chicken from the grill and let it rest for about 5 minutes.
  • Slice it up, garnish with fresh herbs, and serve.

Notes

For a spicier marinade, add a pinch of cayenne pepper or hot sauce. Leftovers can be reheated in a microwave or on a skillet. For the best grill marks, only flip the chicken once.
