Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.25 cup sugar

For the cheesecake filling

  • 1 cup cream cheese, softened
  • 1 cup white chocolate, melted (and slightly cooled)
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, well-drained

For garnish

  • Shredded coconut (optional)
  • Extra white chocolate for drizzling (optional)

Preparation

  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press this mixture evenly into the bottom of a lined baking dish to form your crust.
  • In another bowl, beat the softened cream cheese until smooth. Gradually add the melted white chocolate and mix until combined. Then add in the powdered sugar and vanilla extract, mixing until it’s all dreamy and whipped together.
  • Gently fold in the well-drained crushed pineapple to distribute it evenly.
  • Spread your cheesecake filling over the crust, smoothing it out evenly.
  • Cover the dish with plastic wrap and refrigerate for at least 3 hours to set.
  • Once set, remove from the fridge and slice into bite-sized pieces. Drizzle some extra melted white chocolate on top and sprinkle with shredded coconut if desired.

  • Serve the cheesecake bites and enjoy! Share with friends, family, or keep it all for yourself.

Notes

Don't skip the chill time for the best texture. Feel free to skip the coconut garnish if you're not a fan. Consider adding lemon or lime zest for extra flavor!
