  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced Because garlic makes everything better.
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano Or whatever herbs make your heart sing!

Preparation

  • If using fresh ravioli, boil them in salted water according to the package instructions. For frozen, monitor cooking time to prevent mushiness.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  • Add asparagus and cook for 3-4 minutes until tender but still crispy.
  • Incorporate diced tomatoes and dried oregano. Season with salt and pepper, then let simmer for about 5 minutes.
  • Drain ravioli and gently toss into the skillet, mixing until coated in the sauce.
  • Plate the ravioli and top with fresh basil before serving.

Use fresh or frozen ravioli based on availability. Feel free to substitute vegetables according to your preference, and don’t worry about a chunky sauce—it's just character!
