Ingredients
  

For the Roast

  • 3-4 pounds favorite cut of meat (beef, pork, or lamb) Choose your preferred type of meat.
  • 1 cup fresh herbs (rosemary, thyme, and parsley) Mix and match herbs as desired.
  • 4 cloves garlic, minced Adds flavor to the herby filling.
  • 2 teaspoons salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 1 tablespoon olive oil To create the herby paste.
  • 1 splash white wine Optional for deglazing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Pat the meat dry with a paper towel.

Herby Filling

  • In a mixing bowl, combine fresh herbs, minced garlic, salt, and pepper.
  • Add olive oil to create a paste.

Stuffing the Roast

  • Make a pocket or slit in the meat using a sharp knife.
  • Stuff the herby mixture into the meat and tie with kitchen twine if needed.

Searing

  • Heat a skillet over medium-high heat and sear the stuffed roast for 3-4 minutes on each side.
  • Deglaze with a splash of wine if desired.

Roasting

  • Transfer the meat to a roasting pan and roast for 1.5 to 2 hours.
  • Ensure internal temperature reaches 145°F (63°C) and let it rest before slicing.

Serving

  • Slice the roast and serve with your favorite sides.

Notes

Feel free to mix herbs based on your preference. This meal is also great for meal prep.
