Ingredients
  

Main Ingredients

  • 1.5 pounds chicken thighs, boneless and skinless
  • 1 cup bell peppers, chopped Mix of colors is encouraged.
  • 1 cup pineapple chunks Canned works just fine.
  • 1 onion, sliced

Sauce Ingredients

  • ¼ cup soy sauce
  • ¼ cup honey
  • ¼ cup apple cider vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste
  • Sesame seeds for garnish Optional, for extra flair.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
  • In a bowl, whisk together soy sauce, honey, apple cider vinegar, ketchup, and cornstarch.
  • In a large baking sheet, toss together chicken, bell peppers, pineapple, and onion. Drizzle the sauce over and mix well.

Cooking

  • Place the tray in the oven and bake for 25-30 minutes, or until chicken is fully cooked.
  • Sprinkle with sesame seeds before serving.

Notes

Use pre-cut veggies or frozen stir-fry mixes to save time. Serve chicken deconstructed for picky eaters. Enjoy over rice or in lettuce wraps.
