  • 4 large ripe peaches, sliced and pitted Use juicy, ripe peaches for best flavor.
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • a pinch of cinnamon For added warmth.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the milk and vanilla extract.
  • In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • Gradually add the dry mixture to the wet mixture until just combined.
  • Gently fold in the sliced peaches.

Baking

  • Pour the batter into a greased 9-inch round cake pan.
  • Bake for 35-40 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for about 10 minutes before transferring to a wire rack.

Serving

  • Slice the cake and serve with a dollop of whipped cream.

Notes

Dust the top of your cake with powdered sugar for an impressive presentation. The cake can be stored in an airtight container at room temperature for up to 3 days.
